Homemade S'mores Cookies Recipe
Preparation:
- Preparation Time: 30 Minutes
- Cooking Time: 33 Minutes
Ingredients:
- 30g Wholemeal Flour
- 38g Light Brown Sugar
- 1tsp Bicarbonate of Soda
- 57g Unsalted Butter
- 200g Milk Chocolate
- 6 Large Toasting Marshmallows or 12 smaller ones
- 2tbsp Milk
- 1tbsp Honey
- 1tsp Cinnamon
- 1/2 tsp Salt
Method:
- Preheat the oven to 155°C fan. To make our Homemade S'mores Cookies recipe, combine the Plain Flour, Wholemeal Flour, Salt, Bicarbonate of Soda, Cinnamon.
- In another larger bowl, add the Light Brown Sugar, Honey and the Unsalted Butter and mix until they form a thick paste.
- Gradually add the dry ingredients to the wet ingredients in stages to form a crumbly cookie dough. Add the Milk to the mixture and form it into a ball.
- On a clean and floured surface, roll out the dough until it is 1cm thick. Use a round cookie cutter or alternative and cut out 24 circles. We've gone for a cutter about 3cm wide.
- Line a large baking tray and place the cookies 3cm apart. To make them look more authentic like Graham Crackers use a flat ended skewer to partially indent each Cookie with several holes.
- Put the baking tray into the oven and bake the cookies for 9 minutes at 155°C fan.
- Take your Toasting Marshmallows and slice into 3cm high circles. When your cookies have cooled from the oven, turn 12 of them over onto a Greaseproof Paper lined baking tray and put a Marshmallow on the top.
- Heat the grill and place the baking tray underneath for between 1-3 minutes. Keep an eye on the Marshmallows the whole time as the total toasting time varies.
- Once toasted, take the other 12 cookies and place down on the top of the Marshmallows. The gooey nature of the Marshmallows should stick them together.
- Now you want to take your Milk Chocolate and place it in a heat proof bowl big enough to balance on the top of a small saucepan. Add a saucepan of boiling water onto the hob and place the bowl with the Chocolate in on top. Be careful to not let the water touch the bottom of the bowl. Continuously stir the chocolate over the heat until it is melted.
- Take one of your S'mores Cookies and dip it half in to the bowl of Melted Chocolate to fully cover one side. Set down on the Greaseproof paper tray. Repeat until all 12 S'mores Cookies have Chocolate on them.
- Put the tray into the fridge to set the Chocolate for an hour and a half.
Store in an airtight container in a cool, dry place so the Chocolate doesn't melt.
